Sous Chef assists in the training and supervision of the kitchen team. S/he is also responsible for assisting in food preparation according to IHRs high standards and great recipes. This individual must have the ability to obtain any government required licenses or certificates. For example; in Washington DC you will be required to have a health card permit; and in Oregon you will need to have a liquor service permit.

Supervise the production, preparation and presentation of all foods for the hotel as assigned by the Executive Chef to ensure that a quality, consistent product is produced.
Supervise the production and preparation areas of the kitchen in order to attract, retain and motivate the employees while providing a safe work environment. Schedule, train, and develop line staff.
Monitor and control the maintenance/sanitation of the kitchen and equipment to ensure a healthy, safe work environment which meets/exceeds federal, state, corporate and franchise standards and regulations.
Monitor and control all labor and food costs.
Assist the Executive Chef in the creation, costing and implementation of seasonal and special menus.
